Discussing Food Allergy Awareness With Kai’s Baking Studio Owner, Taneka Walker
May 8–14 is Food Allergy Awareness Week. Over 32 million Americans are living with food allergies. Food Allergy Awareness Week provides a unique opportunity to help raise awareness of food allergies and anaphylaxis. There is a Houston-based bakery that specializes in desserts that cater to the needs of those with diet restrictions including allergies. Kai’s Baking Studio in Houston, Texas is a specialty bakery that is focused on keto/low carb with no added sugar, gluten-free and vegan cookies.
Their journey started off as a father and daughter sharing quality time in the kitchen baking. As their lives changed, they adjusted, due to allergies, and a commitment to improving their health starting, with what they ate. We had the opportunity to sit down with Taneka Walker, the mom behind the brand to discuss how allergies affected their family and helped them launch a business.
Tell us about how your daughter’s allergies prompted you to launch your business.
Kai has an egg, dairy allergy, and gluten intolerance. As we had her tested for what was causing her abdominal discomfort we identified what caused her ailments. We baked all the time together and we worked to find viable replacements for the things she loved.
What are some of the items you offer that are great for people with allergies?
We offer gluten-free cookies, cakes, bagels, bagel dos, kolaches, and pizza rolls. We have an entire product line around gluten-free. We have options that are just gluten-free. Some are vegan and gluten-free, and we offer a whole line of gluten-free options that are low carb and have no added sugar.
Why is offering healthy options important to you?
Healthy options matter to us because we have adjusted our lifestyle. We believe you have to first address your health and all the other things will happen eventually. For example, our keto options are made with high-quality ingredients, there are low carb options that seem to be healthy, but they convert right to sugar which derails your goals. We go with almond and coconut flour and monk fruit as these allow for us to eat clean, but it is still delicious.
What is your best selling dessert?
Our best-selling desserts are our cakes and cheesecakes. We have options that range from a red velvet cake with cheesecake in the middle and we have a Turtle cake that will make you question our no added sugar status.
